My place in the busy mom club is official. The gourmet meals I’d throw down pre motherhood rarely happen. I know the time will come for me to revisit my passion, but with the way life is with my little guy & a husband who is away a lot, I try to keep it healthy & simple.
That’s why I’m a fan of the rotisserie chicken. You know, the store bought cooked pre cooked chickens. If you need something quick to throw together without investing too much time, money & effort, a rotisserie chicken is your best friend.
I’m not even going to lie, this curried chicken salad is LEGIT. You can use it for sandwiches or pitas, wraps (I like it wrapped in collard leaves), on a bed of greens, or a spoonful out of your storage container while standing in front of the fridge (I’m so guilty).
Here are some Fit And Flexible Tips on making this curried chicken salad healthy AND tasty:
Remove the skin to cut down on fat
Instead of using mayo as a base, like many traditional chicken salads, substitute with plain non-fat yogurt
