- 2 cups Cup 4 Cup gluten free flour
- 3/4 cup Swerve granulated sugar replacement
- 1/2 cup Swerve brown sugar replacement
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 oz butter
- 1 egg
- 1 tsp vanilla
- zest of 1 orange
- 3/4 cup orange juice fresh squeezed
- 1 1/4 cup cranberries fresh
- 1 cup Swerve confectioners sugar replacement
- water
Preheat the oven to 300 degrees. Spray a loaf pan with nonstick cooking spray and set aside. Dice the butter into small cubes then set aside.
Combine flour, granulated sugar replacement, brown sugar replacement, baking soda, Kosher salt and chilled butter in a mixer. Use the paddle attachment and mix until the mixture looks sandy.
Combine egg, vanilla, orange zest, and orange juice. Whisk until well mixed.
Slowly add the liquid ingredients to the dry ingredients until smooth. Fold in the cranberries. Transfer the batter to the prepared loaf pan and bake for 60-70 minutes or until done.
When done, remove the bread from the oven and let cool completely.
Place a piece of parchment paper under a cooling rack. Remove the bread from the loaf pan and place it on top of cooling rack.
In a medium sized bowl, add the confectioners sugar replacement. Add water and whisk to the desired consistency.
Drizzle the glaze over the loaf. Let the glaze set, then enjoy!
