Cranberry Orange Bread

Ingredients

  • 2 cups Cup 4 Cup gluten free flour
  • 3/4 cup Swerve granulated sugar replacement
  • 1/2 cup Swerve brown sugar replacement
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 4 oz butter
  • 1 egg
  • 1 tsp vanilla
  • zest of 1 orange
  • 3/4 cup orange juice fresh squeezed
  • 1 1/4 cup cranberries fresh
  • 1 cup Swerve confectioners sugar replacement
  • water

Instructions

  • Preheat the oven to 300 degrees. Spray a loaf pan with nonstick cooking spray and set aside. Dice the butter into small cubes then set aside.
  • Combine flour, granulated sugar replacement, brown sugar replacement, baking soda, Kosher salt and chilled butter in a mixer. Use the paddle attachment and mix until the mixture looks sandy.
  • Combine egg, vanilla, orange zest, and orange juice. Whisk until well mixed.
  • Slowly add the liquid ingredients to the dry ingredients until smooth. Fold in the cranberries. Transfer the batter to the prepared loaf pan and bake for 60-70 minutes or until done.
  • When done, remove the bread from the oven and let cool completely.
  • Place a piece of parchment paper under a cooling rack. Remove the bread from the loaf pan and place it on top of cooling rack.
  • In a medium sized bowl, add the confectioners sugar replacement. Add water and whisk to the desired consistency.
  • Drizzle the glaze over the loaf. Let the glaze set, then enjoy!
