Summer Berry Salmon Salad

Ingredients

  • 3 cups spinach
  • 1 tbsp light balsamic dressing
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1 oz goat cheese
  • 4 oz salmon (sockeye)

Instructions

  • Place greens in a mixing bowl. Drizzle greens with dressing and massage/toss until well coated. When done, transfer the greens onto the serving plate.
  • Tear warm salmon into pieces. Arrange the salmon on top of the greens. Top with blueberries and raspberries. Sprinkle the salad with crumbled goat cheese and enjoy immediately
