Sweet Potato Avocado Toast

- 6 oz sweet potato sliced
- 1/2 cup avocado cubed
- 2 tsp lemon juice fresh
- 1/2 tsp garlic powder optional
- 3 hard boiled eggs halved
- Kosher/sea salt
- coarse ground pepper
- black sesame seeds
Slice sweet potato lengthwise into 1/3 inch slices. Toast until fork tender. Set aside and let cool.
In a small bowl add avocado, lemon juice, garlic powder, salt and pepper. Mash until you reach your desired consistency. Adjust to taste preferences if needed.
Slather mashed avocado along the flat surface of the sweet potato toast. Top with hard boiled eggs, and sprinkle with salt and pepper. Garnish with black sesame seeds and enjoy immediately.
