This slow cooker shredded chicken recipe is not only simple, but it’s extremely versatile. You can throw this shredded chicken into some enchiladas, quesadillas, burritos, tacos, salads, bowls, and don’t judge…its even good cold. I make this chicken weekly because I know there are going to be a few nights where I’m going to have to put out some kind of fire (#momlife), and there won’t be time available for me to cook.
I never was a slow cooker person until I became a mom. I used to pride myself in cooking everything from scratch, but that isn’t my reality right now. Sure, I’ll go back to that at some point, but I appreciate the simplicity in a recipe like this, because it allows me the opportunity to enjoy the things that are most important to me, like watching Toy Story at the end of the day with my little guy.
Ingredients
- 2 lbs boneless skinless chicken breasts
- 1 jar chunky salsa, such as Tostitos
Instructions
- Place chicken breasts in a single layer on the bottom of the slow cooker. Cover and cook on high for 2-2.5 hours.
- When the chicken is fully cooked, transfer the chicken breasts to a large bowl. Shred the chicken breasts with two forks (or a hand mixer to save time).
- Pour salsa over the shredded chicken and mix until the chicken and salsa are well combined. Enjoy immediately or transfer to an airtight container and store in the refrigerator for later.
