Thanksgiving is tomorrow and I am so excited. It’s my favorite day of the year because I get to spend time with my husband and son while I cook. I love all of the typical Thanksgiving posts that have been shared, but I wanted to do something a little different. I have been baking with my soon to be 3 year old more, and wanted to share another bakeable with a holiday vibe.

Gluten Free Low Sugar Cranberry Orange Bread

cup4cup came through with this quick bread. I used all 3 of Swerve’s sugar replacements and there is no difference in taste or texture.
My own husband couldn’t believe it (he’s a picky one!).
If you need a last minute noshable to bring to your Friendsgiving or Thanksgiving, try
this delightfully festive cranberry orange bread. This one is a crowd pleaser I promise you. It is gluten free and low in sugar (3g per slice), but can be easily veganized with an egg replacement of choice and plant based butter. This cranberry orange bread will still deliver for a variety of lifestyles and dietary approaches.

Ingredients
- 2 cups Cup 4 Cup gluten free flour
- 3/4 cup Swerve granulated sugar replacement
- 1/2 cup Swerve brown sugar replacement
- 1/2 tsp baking soda
- 1/2 tsp salt
- 4 oz butter
- 1 egg
- 1 tsp vanilla
- zest of 1 orange
- 3/4 cup orange juice fresh squeezed
- 1 1/4 cup cranberries fresh
- 1 cup Swerve confectioners sugar replacement
- water
Instructions
- Preheat the oven to 300 degrees. Spray a loaf pan with nonstick cooking spray and set aside. Dice the butter into small cubes then set aside.
- Combine flour, granulated sugar replacement, brown sugar replacement, baking soda, Kosher salt and chilled butter in a mixer. Use the paddle attachment and mix until the mixture looks sandy.
- Combine egg, vanilla, orange zest, and orange juice. Whisk until well mixed.
- Slowly add the liquid ingredients to the dry ingredients until smooth. Fold in the cranberries. Transfer the batter to the prepared loaf pan and bake for 60-70 minutes or until done.
- When done, remove the bread from the oven and let cool completely.
- Place a piece of parchment paper under a cooling rack. Remove the bread from the loaf pan and place it on top of cooling rack.
- In a medium sized bowl, add the confectioners sugar replacement. Add water and whisk to the desired consistency.
- Drizzle the glaze over the loaf. Let the glaze set, then enjoy!
