I have a confession…I love all things toast. From a beautiful sourdough, to a buttery toasted brioche…I love it all. If you know me, you know I believe that there is room for all foods…and in this season of my journey, I want to get more nutritional bang for my buck (when you are of a certain age, you start to think like this).
So guess what? I am enjoying the next best thing to toasted bread (because toasted bread is life), which is sweet potato toast. If you are new to the sweet potato toast game, let me tell you…the game has been changed!!!
You can enjoy toast like you never have before. You can go sweet, savory, fully loaded with a vessel that will stand up to whatever you top it with…in the wise words of my 3 year old:
“It is good!”
The possibilities are endless and with this variation, I had to have an avocado toast moment. Usually I top my avocado toast with bacon, but I had some hard boiled eggs on hand and went for it. I sprinkled the toast with some sesame seeds for dramatic effect (I’m extra…what can I say?), and the result was a deliciously clean, nutrient dense, protein rich meal that kept me full and feeling good for hours.
Ingredients
- 6 oz sweet potato sliced
- 1/2 cup avocado cubed
- 2 tsp lemon juice fresh
- 1/2 tsp garlic powder optional
- 3 hard boiled eggs halved
- Kosher/sea salt
- coarse ground pepper
- black sesame seeds
Instructions
- Slice sweet potato lengthwise into 1/3 inch slices. Toast until fork tender. Set aside and let cool.
- In a small bowl add avocado, lemon juice, garlic powder, salt and pepper. Mash until you reach your desired consistency. Adjust to taste preferences if needed.
- Slather mashed avocado along the flat surface of the sweet potato toast. Top with hard boiled eggs, and sprinkle with salt and pepper. Garnish with black sesame seeds and enjoy immediately.
