My son has been home with me for the last few days and I’ve taken full advantage of the time we are spending together. Oftentimes you can find him on the counter top watching me as I’m testing recipes
but today, I wanted him to be in charge. I love doing activities with him, and when we are doing something involving food, our time together feels extra special and fun.
He can be picky at times…his diet currently consists of fishy crackers, circle crackers and animal crackers. I know it’s a phase, but I really believe that when kids participate in the making of a dish, they are more than likely going to want to try it. Today was no exception…he had so much fun making this healthy yogurt bark and I felt good about him eating a serving of fruit and protein without it being too obvious.
The absolute best part of this yogurt bark was his precious smile as he was eating some… the messy hands and the yogurt mustache were so worth it…and this experience we shared is something we will both remember forever.
Ingredients
- 2 cups lowfat Greek yogurt
- 1/4 cup granulated sugar replacement
- 1 tsp vanilla extract
- 1 cup strawberries diced
- 1 cup blueberries
- 1/4 cup granola
Instructions
- Line a baking sheet with parchment paper and set aside.
- Place yogurt, granulated sugar replacement and vanilla extract into a large mixing bowl. Stir until well combined.
- Pour the yogurt onto the baking sheet. Spread the yogurt in an even layer along the surface of the baking sheet.
- Top with strawberries, blueberries and granola.
- Place the baking sheet in the freezer until the yogurt bark is firm. When firm, remove the baking sheet from the freezer. Break/cut bark into pieces and enjoy!
