It may be cold and rainy, but a girl can still dream about summer right?
Even though I’m dreaming about summer, I’m also dreaming about ways I can save money on food.
Can you believe this money saving meal would easily cost 18 bucks or more at a national chain restaurant but was less than 6.50 when made at home
So let’s break it down shall we?
Spinach: Spinach is a dark leafy green that has a neutral taste. Its extremely versatile, affordable (4.99), good for you and makes a great base for salads.
Salad dressing: Trader Joe’s Fig & Balsamic is my favorite balsamic salad dressing. It’s inexpensive, the macros are great and it doesn’t have that weird artificial taste many other store bought brands have. I love to make my own salad dressing, but when I’m in a pinch…this is my go to. For .29 cents a serving…you can’t really go wrong.
Frozen Salmon: There are a variety of frozen salmon options, but I stock up on Atlantic salmon because it has a higher fat content and it’s affordable. Sure you can go with a wild sockeye (20.99 per package) or whatever you prefer, but in terms of saving a few bucks, you can’t go wrong with Atlantic (9.99 per package).
Berries: Berries are typically pretty affordable (2.99 each) and readily available year round. I always stock up on fresh berries because we love them, and the sweet & tart notes compliment savory foods like salmon in this salad perfectly.
Goat Cheese: This goat cheese was on sale so I had to buy some (3.99). I love adding a little goat cheese because I appreciate it’s creamy tangy energy, but if it isn’t your thing, you can omit it and still have a bomb healthy salad.

Ingredients
- 3 cups spinach
- 1 tbsp light balsamic dressing
- 1/2 cup blueberries
- 1/2 cup raspberries
- 1 oz goat cheese
- 4 oz salmon (sockeye)
Instructions
- Place greens in a mixing bowl. Drizzle greens with dressing and massage/toss until well coated. When done, transfer the greens onto the serving plate.
- Tear warm salmon into pieces. Arrange the salmon on top of the greens. Top with blueberries and raspberries. Sprinkle the salad with crumbled goat cheese and enjoy immediately
